Update:
Just got back from Phoenix. No SC300 so now I gotta figure out what to do with my 19" Professors. But really, it's nothing I'd expect you guys to get excited about.
91 N/A has rod knock needs paint, but nearly perfect interior, straight body, and a clear title. When I saw the interior I was sold. Paid $1200. Probably buying a 3sgte swap once the professors are sold. It's gonna take a while to get it where I want it but that's what I wanted, a project. I'm pretty stoked 
I haven't had a project car in 5 years. I just sold my 350z and my sole driver is a new Tundra, which I'm going crazy driving on a daily basis after only a month.
I want RWD and I think that's about it. Right now I'm torn between SC300 and MKII MR2. Miatas are out, sorry, I just don't like them and I know they'd get suggested.
MR2
-4cyl, so it's cheaper/easier to work on since I'm mostly familiar with 4cyl engines
-Difficult to find unadulterated
-Turbo ones can be found for $4k if I'm patient.
SC300
-Everywhere, in all colors
-Difficult to find in a manual, and it seems people selling the manual ones know that.
-Usually dead stock owned by a blue hair who just died
-I don't even know what a 2jz swap would cost but I'm sure it's expensive.
-I do have some SSR Professors laying around to throw on it and with some coilovers I'd immediately be happy with the looks.
Any other suggestions? Recommend one over the other? And FWIW I've never driven either and know very little about modding them, but I assume the MR2 would be super easy and cheap based on what I know from the DSM scene.

I vote SC300
single turbo right off the bat
keep it auto for the daily driver 
and seriously, auto supra's are just as fast  just put a real auto in it and you'll be fine

I vote SC300 single turbo right off the bat keep it auto for the daily driver and seriously, auto supra's are just as fast just put a real auto in it and you'll be fine
If you look for a Toyota soarer (still an SC300) you will find more in manual.

Miatas are out, because I'm not man enough to drive one sorry, I just don't like them because other dudes won't approve and I know they'd get suggested because they are the best option in my price range. I'd rather blow head gaskets and lots of dudes behind closed doors instead.

Yeah, that can happen. I blame a worn out engine wiring harness. A loose fuel line is conceivable, but the car was dead cold and I don't see how even a fuel leak would have ignited like it did... sigh.
MR2 Turbo gets my vote for project car, though it would be nearly impossible to find a clean one at $4k. Pay $6k and get a much more well loved car. Pay $8k and get a garage queen gem. Unless the economy has crushed prices since I was in the market, this is about right.
As for them being "super easy and cheap"... I dunno. They aren't bad, but they were very far from mass produced, in fact, rare. I want to say 1100-ish Turbo models were delivered to North America for 1993, 300-ish in 1994, and under 100 in 1995. OEM parts are pretty damn expensive.
The car isn't easy to work on, but it's not as bad as some may think. The timing belt side of the engine is a bitch. Might as well drop the motor if a t-belt needs replacing (which they do). Luckily, dropping the motor isn't too hard... if you can get the car four feet in the air. I dropped the tranny in my 1 car garage when I had to replace the clutch.
What are the goals for this project car?

Comparatively, was what I was getting at.
Compared to the plethora of drivetrain choices to swap into a Fiero, and inital cost of buying the car and donor for the drivetrain swap, you're looking at pennies to the dollar, when put side to side with the MR2.

In all seriousness, if you refuse the Miata, I would get an Mr2. I'd probably get a later one (didn't the 93-95s have the safest suspension setup?). Edmunds says the base only weighed 2657 pounds... holy shit.
The 240sx would also be very tempting.
I think I read that there was a snap oversteer issue in the 91-92s. I've only been reading about them for a few weeks but I don't remember for sure. But the early ones are the cheapest ones so I'd likely buy a 91-92.

I knew someone would say this, but I simply don't like them. I remember calling them tic-tacs when I was a kid because I thought they were ugly and looked like tic-tacs. As far as a car with the gay "stigma" I'd drive a FWD mini before I drove a miata. One could argu minis are way less "manly". Plus I don't want a vert.

The last time I talked about these things (7~? years ago), I was told the 91-92 had the snappiest rears. I'm sure there are fixes for this though.

Ive always wanted a MR2 Turbo. That would be my choice. Sounds awesome. If you're patient Im sure you can find one,lots of people selling their toys right now,often at fire sale pricing.

I have a book with a very nice write-up of a v6 swapped, twincharged sw20. Really cool concept and excecution. If you want to spend a shitload of money, do that.
I like the S-chassis cars alot and you can do a CA18 for cheap or an RB25 for serious torque. Lots of easy upgrades and easy swaps between Z32s and R32s.
I'm also a big E30 fan. Not a bad way to go if you want a fast turbo project with a more solid chassis than the S13.

Lots of good suggestions in here. I'd go the MR2/F-Body/SN95 5.0 route. An E36 328 lightly gutted and w/ steeper gears would make a fun little track slut. There's been a few 99-00 Mustang GT's popping up on CL around here for under $5k as well.
