They're expensive. I hope you like doing your own clutch jobs if you own one, lol. On the plus side, they're generally very reliable and sturdy as long as they're taken care of. When something major does go wrong, however, it's an atomic bomb on the wallet. 944 ftw though

Not me. Though I think a 2.5 to 3 liter inline four is kind of insane, I also think that a significant part of what makes a Porsche a Porsche is the motor.
Plus, it seems like the Ford V8's weigh a fucking ton. From reading the Volvo V8 swap information, the cars gain several hundred pounds, and a B230 is not that light of a motor to begin with.

Just buy a 928 is you're wanting a v8 Porsche. The cars are very reliable if they've been taken care of and I'd bet that a 951 can make more power cheaper than a blown 302. If you're really wanting to do an engine swap, buy an FB or FC with a shot engine and do the swap on those. They're very well documented and you can actually buy the parts you need for the swap without fabbing them.
Anecdote, I know, but my brother's 928 spent as much on maintenance in the couple years he had it as he bought it for. They are RIDICULOUSLY expensive to maintain. Sound lovely though, I'll give them that, but terrible gearboxes.
And isn't a 302 with Al heads relatively light? I know people wouldn't be swapping them into Miatas if they were TOO piggish. I agree that I'd rather start with an FC/FD, but that more for the breadth of the chassis aftermarket. Older P-cars don't have a lot of choices in suspension and shit, and what is there seems spendy.

What about an eighties or early/mid '90's 911 parts? There are two reputable Porsche shops close by, and I have considered doing something foolish like daily driving an old 911.
They aren't cheap, at all.
